Title: Deer Summer Sausage

i made some deer summer sausage over the weekend... cut, ground and stuffed 15 lbs all by myself.  i really need a vertical stuffer, my old lever action is hard to use alone.  gave a bit to a couple guys at work and they are already wanting me to turn their elk into summer sausages, both willing to pay well too.

these sausages were huge, i put the can in there for reference.

a little smokey, but super tastey.

i cut and wrapped in 1 lb pieces.

thanks john, now i have 15 lbs of jerky going in the smoker tonight, thats gonna take forever!

Good thing is, unless there is something weird about your smoker, 1 lb 15 lb don't matter. It all takes the same amount of time.

My smoker is about the size of a mini fridge, so it took 3 batches to smoke all 15 pounds, i started at around 4:30 and finished around 9:30.
