South Of The Border Blackened Redfish

1 Fillet of Redfish
Blackening Season
1 Jar of Salsa
Jallipino Jack Cheese
Olive Oil


   Get you Blackening Pan Searing Hot,take your Redfish Fillet and coat it with Olive Oil,then cover one side of the fillet heavy with your Blackening Season,then put it in your pan,add just a light sprinkle of Blackening Season to the back side of the fillet " Do Not Flip your fillet" you want to cook it all the way from this side only,that will give you a nice Blackened  surface on one side.When finished,gently slide a Spatula under the fillet,and flip it on to another pan Blackened side up,cover with Salsa and Cheese,slide the pan into the Broiler until Cheese is melted.

Serve over Rice with Vegies,sure to make even the Fish Hater`s come back for second`s. :wink:

`Tis,I`m not much of a Fish Eater myself,must be" I just cought it "Fresh,I have to clean it,and I have to cook it......It`s a Bone Issue !

But I use my Blackening Pan alot when I have Guest`s over after a good day of fishing. Works with just about any thick peice of fish. :wink:
