2-3 pound venison round, leg, or rump roast
1 can (12 oz) beer (Don't drink it...it's for the deer)
3 cloves garlic
salt & pepper
2 onions, sliced (big or small...depends on how much you like onions)
3 bay leaves
2 cups b-b-q sauce (get your own, or try the one below)

You want to trim the excess fat from the venison.  In a large bowl, mix beer (no tasting..tsk tsk..), garlic, salt (just a pinch'll do), pepper (again..just however much you like), onions, and bay leaves (all this is your marinade); add venison.  (Marinade should cover meat).  Marinate in fridge for 12 to 24 hours, turning occasionally. (To make the time pass...you can get into the remaining 11 beer in the pack).  Remove venison and onions from marinade and place in Crock Pot.  (You may need to buy one if'n you're not from the south...Southerners..just look in your cupboards for yours..).  Pour 1 cup B-B-Q sauce over top.  Cover and cook on Low for 10 to 12 hours.  Serve with remaining barbeque sauce.  (serves 6)

Now, for the sauce....you can use this..or you may have a recipe of your own (or if you're particularly lazy...just grab up a bottle at your local grocery store) You need to make this FIRST..unless you happen to have 2 crock pots.
(Barbeque Sauce)
1 cup finely chopped onion
3/4 cup finely chopped celery
3 TBS butter
6 TBS sugar
3 TBS Worcestershire sauce
6 TBS wine vinegar
3/4 cup lemon juice  (you can use less....depending on your taste)
3 cups ketchup
3 tsp dry mustard
2 tsp liquid hickory smoke
salt & pepper to taste

In a skillet, saute onion and celery in butter.  Add to Crock Pot with remaining ingrediants.  Cover and cook on Low for 8 to 10 hours OR on High for 3 to 4 hours, stirring occasionally.  Makes about 5 cups.

There ya go!

that must be why some of us measure our ingredients by a little of this a dash of that. to much marinade, we can remember the amounts!

Only 5?????????  What's up with that? :?:   The way that I figure it, it's going to  take at least 2 days to fix this (including the BBQ sauce).  Gonna need more than 5 for the cook to properly "cook"! :P

I've made some really good stuff, using a "base" recipe.  Only problem is that after 2-3, I'm usually saying it needs more of this or that.  I can never duplicate them!  And am usually not in any condition to write them down!!!!  LOL :D  :D

In all seriousness, the Marlin is a great rifle, too. I own a Model 60, one of the best rifles ever made.
Brownings are nice, but in terms of quality AND accuarcy AND ruggedness, it's hard to beat the Marlin.
California sucks that's it.

And Big58cal.....you ever got smashed and forgot a crock pot was on?  You'll scorch the bottom of that booger real bad..and the 2 days of cookin was wasted time.  That's why I recommend a 6 pack here stead of a case.... :D

ya'll have a good'un!
