Wild pork tenderloin or backstrap

Want something tasty. After removing the tenderloin or backstrap from a pig, filet it and lay it out flat. Take a package of cream cheese and let it soften to room temperature while thin slicing an avocado or two. Salt and pepper the top(inside) of your loin. Then spread the cream cheese onto the topside of your meat. Layer the avocado slices on top of the cream cheese. Roll the meat into a pinwheel and wrap with heavy smoked bacon. It is now ready to go on the grill, into the oven or onto a smoker. Cook until bacon is done medium well. Very big hit with large groups.
