We have lake and dollyvarden ( Bull ) "trout" and yes there a Char.
We also have Rainbow, brown, cut throat , and brook trout.
We do fry the ling , some people Poach them in water or beer, My favorite is battered and deep fried.
There "skin" is like a cat fish so is there head and mouth.
They can change color too to match the bottom, from mud brown to moss green
